Step 1. Combine 1 teaspoon salt, 1 teaspoon pepper and ¼ cup flour. Heat oil in a large, dry Dutch oven over high heat until smoking, about 5 minutes. Dust duck with flour mixture, shake off excess and sear in the oil 5 minutes until brown on all sides. Remove from pan.

Add the thyme, oregano, bay leaves and garlic and simmer over medium-low, stirring and skimming every 20 minutes, until the flavors have melded, about 2 hours. For a thinner gumbo, add water, as desired (up to 2 cups). Step 4. Stir in the duck meat just before serving and cook until warmed, 3 to 5 minutes.

In a large stockpot, add the canola oil and heat on medium. When the oil is hot, add half the andouille sausage and cook until browned, about two to three minutes. Flip and brown on the other side. Repeat with the other half of the sausage. Turn heat down to medium-low. Add the duck breasts skin side down.

Add the duck meat and continue to cook for another 30 minutes. Season with salt and black pepper. The gumbo should be fairly thick. To serve, mound 1/2 cup rice in the middle of each warmed bowl. Using a slotted spoon, divide the meat among the bowls. Ladle about 2 cups of the gumbo around the rice in each bowl.

Directions. Heat a Dutch oven over medium-high heat. Season duck pieces with Creole spice and brown on all sides, in batches, if necessary. Remove duck pieces to a plate, reduce heat to medium, add lard and melt. Stir in flour and cook, whisking, until it becomes a nutty-brown roux, about 15 minutes. Add onions, celery, green pepper and cook.

1. Place the ducks in the soup pot filled with water. Add the salt and pepper to taste, and the bay leaves. Bring to a boil, lower to a simmer, and cook until the ducks are tender but not falling apart, about 2 hours. 2. Remove the ducks from the broth and set aside. Reserve the broth, (discard the bay leaves).

Remove and set aside. Discard all but 2/3 cup drippings. Add flour to drippings; cook and stir over medium heat until brown, 12-14 minutes. Sprinkle half of the seasoning mixture over the duck in a bowl and toss to coat. Let stand for 30 minutes. Mix the remaining seasoning and half the flour in a bowl. Add to the duck and toss to coat.

Combine ingredients for seasoning mixture. Toss duck with 1/2 of seasoning mixture and set aside for 30 minutes. Combine 1/2 the flour and the rest of the seasoning mixture. Toss duck with flour/seasoning until well coated. In a small pot, heat 1/4 cup oil until very hot. Fry duck until brown on all sides and meat is cooked. Drain on paper towel.
