Step 1- Marinate the lamb. Add garlic cloves, ginger, white vinegar, green chilis, and tomatoes to a blender and blend until smooth. Pour this mixture into a bowl. Add the chopped lamb along with the vindaloo paste. Mix well to get the lamb fully coated in the marinade mixture.

Hmm, microwavable lamb. As one of our fans aptly said, that's kinda a scary notion, so it was with a little bit of trepidation that I bought this for myself.

From a nutrition standpoint the dish is moderately healthy. The calories and fat content are a little elevated but I am assuming that is because of the lamb.

Instructions. Put all the ingredients for the marinade into a food processor and blitz. Stir it into the lamb and put in the fridge for 24 hours. Heat a little oil in a saucepan and when it is hot, add the mustard seeds and cardmom pods. Cook for about 30 seconds and when the mustard seeds start to pop, add the onion.

Moderately spicy (was hoping for a bit more spice like the Fiery Chicken Curry) with a great curry flavor. The lamb is tender and tastes like a refined pot roast. Basmati rice is cooked well and pairs perfectly with the excess curry; I prefer it over the turmeric rice in other TJ's dishes. 9/10 due to desire for a bit more spice and the average.
