The El Parasol concept began in 1958 with Pedro and Lorenzo Atencio, ten and twelve years old respectively, selling their mother's beef tacos and red pork tamales under a patio umbrella on the main street in Espanola, New Mexico. This business venture was limited to the summer months. Price for a taco was 15 cents and tamales were 10 cents.

I went to the Espanola location to try it for myself on 10/23/22. I ordered three chicken tacos with guacamole and my husband ordered a chicken burrito with green chili. I am a native New Mexican and this food was horrible. First, the tacos were greasy and in both my order of tacos and my husbands burrito, the chicken was flavorless.
