Measuring flour correctly. Be careful not to over measure the flour in this recipe. It is easy to over measure flour for any recipe by as much as 30% or more as you can see in the photo below. Both are one cup of flour but one weighs much more.

Remove the muffins from the oven and let cool in the pan on a rack for about 5 minutes. Turn the muffins out onto the rack to cool completely. Cover and store at room temperature for several days.

Add in the oats, 1/4 cup (60ml) more water, cooked quinoa (optional, I am on quinoa roll), lemon zest, mix well and keep aside for a few minutes. In a bowl, mix the flours, salt, baking powder. Add in the wet mixture and mix for only a few strokes. If the mixture stays too stiff, add more water. do not overmix.
