Marry Me Chicken Insanely Good

2 pounds boneless skinless chicken thighs; 3 cloves minced garlic; 2 teaspoons dried oregano (fresh and chopped is also nice if you have it); 1 cup chicken stock; 2 tablespoon olive oil, plus a little more; 3/4 cup heavy cream; 1 teaspoon crushed red pepper flakes; A pint of cherry tomatoes (or a few less), most of them cut in half; Fresh parsley, torn to garnish

While the chicken cooks, add the ½ cup sun dried tomatoes, 1 cup chicken bone broth, ½ cup heavy cream, and ½ cup cottage cheese to a blender and blend until smooth and creamy. Reduce the heat to low and add the sauce to the pan. Bring to a low boil, just enough to heat through. Then stir in the basil and parmesan.

Instructions. Preheat the oven to 375 degrees F. Add oil to a large cast iron skillet over medium heat. Add salt, pepper, basil, thyme, crushed red pepper to a small bowl. Stir to combine. Season both sides of the chicken breast with the seasoning mixture.

Heat oil in a pan and carefully add the chicken. Brown on each side. 3. Turn the heat down and add garlic, sun dried tomatoes, oregano and paprika to the pan. Cook as per the recipe below. 4. Add the cream, stock, parmesan and salt and pepper. Stir and add the chicken. Put the lid on and cook as per the recipe below.
