Pickled green onions, or scallions, become quite tangy in this recipe. A pickled onion is a classic side to the British Ploughman's Lunch.. Divide spices evenly between the prepared canning jars. Pack onions vertically into jars, alternating tips-up and tips-down to fit onions snugly. Bring water, vinegar, and salt to a boil in a saucepan.

Transfer the onions to clean, sanitized hot jars and leave at least an inch of headspace. Add ½ teaspoon of salt for pint jars and one teaspoon for quart jars. Fill the jars with boiling water maintaining 1-inch headspace. Remove excess air bubbles using a spatula by running it along the inside of each jar. Wipe the rims of the jars, cover.

Instructions. Trim the green onions to fit in your canning jars. You'll want the tops of the onions to come just 1/2" under the lip of the jar. Pack them tightly, but do not overpack. To each jar, add one clove of smashed garlic, 2 tsp pickling spice (for 1 Tbsp total - divided), and dill.

Oven Directions: Prepare per the above directions. Spread your green onions onto a parchment paper-lined cooling rack if possible (I use this one from Amazon).
